The Scoville Scale is a measurement which records the level of spiciness found in chilli peppers. Originally devised in 1912 and named after its creator Wilbur Scoville, an American pharmacist, the scale measures the level of capsaicin concentration found in a chilli, capsaicin being the chemical responsible for it's hotness. Measured in Scoville Heat Units or SHU, the highest recorded chilli pepper is 'Pepper X' which comes in at around almost 2.7 million SHU.
